Notes: Makes about 10-15 cookies. Can be doubled or tripled easily. If coconut sugar is not available, granulated or raw sugar will both work.

Ingredients

  • 1/4 cup melted and cooled coconut oil
  • 1/4 coconut sugar
  • 2 T molasses
  • 1 egg at room temperature
  • 1 t vanilla extract
  • 1 cup almond flour
  • 1/4 cup coconut flour
  • 1/2 t baking soda
  • 3/4 t ground ginger
  • 1/2 t cinnamon
  • 1/2 t allspice
  • 1/4 t salt
  • Extra sugar for rolling

Directions

  1. Preheat oven to 350 degrees F
  2. In a large bowl, mix together cooled coconut oil, coconut sugar, molasses, egg, and vanilla extract. Seriously, make sure the coconut oil is cooled!
  3. Add almond flour, coconut flour, basking soda, spices, and salt. Mix well to combine and form a dough. Rest for just a few minutes.
  4. Scoop a heaping tablespoon of dough, then roll between your hands to form a ball. Roll the ball in the extra sugar, if desired, then place on ungreased, papered baking sheet.
  5. Using your hand or the bottom of a glass, gently flatten each cookie. Bake for 8-11 minutes.
  6. Allow cookies to cool on cookie sheet for 10 minutes, then transfer to a wire rack to finish cooling.
