- 1 1/2 pounds lean boneless beef (sirloin or top round), pork (butt or leg), or chicken
- 1 clove garlic, minced or pressed
- 2 tablespoons soy sauce
- 1 tablespoon salad oil
- 1 teaspoon ground cumin
- 1 teaspoon ground coriander
Basting Sauce Ingredients
- 3 tablespoons lemon juice
- 2 tablespoons soy sauce
- 1/4 teaspoon ground cumin
- 1/4 teaspoon ground coriander
Peanut Sauce Ingredients
- 1 cup water
- 2/3 cup creamy or crunchy peanut butter
- 2 cloves garlic, minced or pressed
- 2 tablespoons brown sugar
- 1 1/2 tablespoons lemon juice
- 1 tablespoon soy sauce
- 1/4 to 1/2 teaspoon chili paste or crushed red pepper
Directions

- Cut meat into 3/4 inch cubes.
- Stir together garlic, soy, oil, cumin, and coriander.
- Add meat and stir to coat evenly. Cover and refrigerate for 1 1/2 to 2 hours.
- After refrigerating, thread cubes of meat onto bamboo skewers. Place on grill at medium heat, or place on a rack in broiler about 4 to 6 inches below heat.
- Cook, turning often, until done. 8 to 10 minutes for beef, 15 minutes for pork, 12 minutes for chicken.
- Three minutes before end of estimated cooking time, brush meat with basting sauce. Serve with peanut sauce and chili sauce.

- In a small bowl, combine all ingredients.
Peanut Sauce Directions
- In a small pan, combine water, peanut butter, and garlic.
- Cook over medium heat, stirring, until mixture boils and thickens.
- Remove from heat and stir in brown sugar, lemon juice, soy sauce, and chili paste or crushed red pepper.
- Let cool to room temperature before serving.
- Thin with water to make a medium-thick sauce.
