Ingredients

Salad

  • 1 package (10 oz) mixed salad greens
  • 1 c ripe olives
  • 3 plum tomatoes cut into wedges
  • 1 small red onion, thinly sliced
  • 1/2 medium cucumber, peeled, cut into wedges
  • 1/2 c coarsely chopped walnuts
  • 8 oz feta cheese

Dressing

  • 1/2 c Extra Virgin Olive Oil
  • 1/4 c lemon juice
  • 1 clove garlic, minced
  • 1 tsp dried oregano leaves
  • 1/4 tsp pepper
  • 1/4 tsp salt

Directions

  1. Mix salad dressings together.
  2. Toss greens, olives, tomatoes, onion, and cucumber with dressing. Spoon into serving plate.
  3. Toast walnuts in a large non-stick skillet on medium-high heat for 5 minutes, stirring constantly.
  4. Arrange cheese over salad; sprinkle with walnuts.
