  • Can omit the dill for a wonderful, simple white bread.

Ingredients

  • 1 package dry yeast
  • 1/4 cup warm water
  • 1 cup creamed cottage cheese
  • 2 tablespoons sugar
  • 1 tablespoon minced onion
  • 1 teaspoon dill seed
  • 1 teaspoon salt
  • 1/4 teaspoon baking soda
  • 1 egg beaten
  • 2 1/4 to 2 1/2 cups flour
  • 1/4 cup shortening

Directions

  1. In a large bowl, dissolve the yeast in warm water.
  2. In a saucepan, heat the cottage cheese, sugar, onion, dill seed, salt, and baking soda to lukewarm. Add this mixture to dissolved yeast and beat in the egg.
  3. Gradually stir in flour to form a soft dough. Transfer the dough to a floured surface and knead until smooth, about 5 minutes. Place the dough in a greased bowl, turning to grease the surface. Cover with a damp cloth and let rise in a wamr place for 1 to 1 1/2 hours or until double in bulk.
  4. Punmch down and cover. Let the dough rest 10 minutes. Shape into a loaf and place in a greased 9 inch by 5 inch by 3 inch loaf pan. Let rise, covered, in a warm place for 1 hour or until double in bulk.
  5. Bake at 350 for 40 minutes. Remove bread from the pan and brush with butter. Slice with serrated knife when cool.
