Ingredients

  • 2 beaten large eggs
  • 1/4 c all purpose flour
  • 2 tbsp grated parmesan
  • 1/2 tsp kosher salt
  • 2 c fresh corn kernels
  • 1 thinly sliced scallion
  • 1/2 finely chopped jalapeno
  • 2 tbsp vegetable oil
  • Sour cream (optional)
  • Lime wedges (optional)

Directions

  1. Pulse eggs, flour, parmesan, and kosher salt in a food processor to combine. Add corn, scallion, and jalapeno. Pulse 2 to 3 times.
  2. Heat vegetable oil in a large nonstick skillet over medium heat. Working in batches, cook heaping tablespoonfuls of batter until golden brown, about 4 minutes per side. Season fritters with salt.
  3. Serve with sour cream and lime wedges.
