Ingredients

  • 12 to 15 green chiles; roasted, seeded, and peeled
  • 4 cups grated cheddar
  • 5 eggs
  • 1 1/4 cup of milk
  • 1/4 cup of flour
  • salt and pepper

Directions

  1. Preheat oven to 350°.
  2. Lay chiles flat in bottom of casserole dish sprayed with cooking spray. Sprinkle two cups of cheese over the chiles, then add a second layer of chiles.
  3. Mix eggs, milk, flour, salt, and pepper together and pour over chiles. Sprinkle two more cups of cheese over the top.
  4. Bake in oven uncovered for 50 to 60 minutes.
