  • Makes 1 9” by 5” loaf pan.
  • Can double recipe and put in a bundt pan to serve 10.
  • Lis always skips the topping.

Ingredients

Bread Ingredients

  • 8 oz flour
  • 1 teaspoon baking soda
  • 1/2 teaspoon salt
  • 5 oz brown sugar
  • 4 oz grated carrots
  • 2 ripe bananas mashed
  • 2 eggs
  • 1/2 cup vegetable oil

Optional Topping Ingredients

  • 2 oz soft margarine or cream cheese
  • 6 oz sugar
  • grated rind and juice of 1 orange
  • 1/2 egg white beaten
  • orange wedges to decorate

Directions

  1. Preheat oven to 350°.
  2. Mix the flour, baking powder, soda, and salt together. Can sift ingredients if so inclined.
  3. Stir in brown sugar, carrot, and bananas.
  4. Mix lightly, then blend the eggs and oil into the mixture. Pour into floured and greased pan.
  5. Bake for 1 hour to 1 hour 15 minutes until toothpick comes out clean.
  6. For topping, beat all ingredients together (except orange wedges), until light and fluffy. Then, spread over cake. Decorate with wedges.
