Ingredients

  • 1/2 cup butter
  • 1 cup sugar
  • 2 beaten eggs
  • 3 ripe, mashed bananas
  • 2 cups all purpose flour
  • 1 teaspoon salt
  • 1 teaspoon baking soda mixed with 3 tablespoons of cold water
  • 1 teaspoon vanilla
  • 1/2 cup chopped nuts

Directions

  1. Cream butter and sugar until light.
  2. Add beaten eggs and mashed bananas.
  3. Sift flour and salt together and add to the first mixture.
  4. Add baking soda, vanilla, and nuts and mix well.
  5. Bake for 1 hour to 1 hour 15 minutes at 325­°.

Notes

Makes one 9” by 5” loaf.
