Ingredients

  • 1.5 pounds stew beef, cubed
  • 2 tablespoons cooking oil
  • 3 tablespoons all purpose flour
  • 15 oz can diced tomatoes
  • 1 clove garlic, minced
  • 1 bay leaf
  • 1 teaspoon sugar
  • 1 teaspoon instant beef bullion granules
  • 1/2 teaspoon dried thyme
  • 1/2 teaspoon dried oregano
  • 1/2 teaspoon salt
  • 1/4 teaspoon Tabasco sauce
  • 3 medium potatoes cut into 1” cubes
  • 1 small bag baby carrots
  • 1 medium onion cut into wedges
  • 8 oz can of green beans

Directions

  1. In a large skillet, brown meat, reserving the drippings. Transfer meat to a large casserole.
  2. In the skillet, combine tomatoes, garlic, bay leaf, sugar, bullion, thyme, oregano, Tabasco sauce, and salt. Add flour, and cook until thickened.
  3. Add potatoes, carrots, onions, and green beans with liquid to the casserole. Mix in tomato mixture.
  4. Bake covered at 350° for about 1 1/2 hours or until all ingredients are tender.
